古来より日本人は海藻を食してきました。現在この食文化は欧米へと広がり、海藻は健康食材として世界中で注目されています。沖縄では、美しい海を利用した海藻養殖が盛んに行われています。今回は沖縄の特産品であるモズクと海ぶどうについての最新のゲノム研究についてお話させていただきます。また研究により示唆された、海藻と健康の関係についてもご紹介したいと思います。
